Champagne cellar tour

Will be in Paris this April. Would like to plan a day trip or day and night trip to Reims / Epernay. Want to visit one or two champagne cellars.

1) What cellars would you recommend?

2) What restaurant for lunch and or dinner?

3) What B%26amp;B or hotel for the night?
